A Fork’s Tale | Fayetteville

A Fork’s Tale is written by my friend Katie. I have fallen in love with the way she shares her love of food through amazing imagery and videos. Katie is based right here in Fayetteville, NC and besides being an amazing person she has a passion for finding and making food that tells a tale all its own.

My most recent favorite recipe from Katie has got to be the one you see above – The Cheesy Chicken Enchilada Casserole! This looks like the perfect dish to feed my entire team while only leaving me one dish to wash. I see this as being my next Taco Night Switch Up dish for sure!

Now that I’ve found her blog, I already have a recipe I hope to duplicate in my own kitchen. Summer is way to hot to always eat hot so a great pasta salad is something I can’t wait to try. That’s why Shardae’s take on a Seafood Pasta Salad has all my attention! Oh and the sea food is tuna so I know this dish will be a win for the whole table!

Kenya Rae · The Modern Homemaker | Wake Forest

Kenya Rae is another friend of mine who makes food her passion with dishes you’ll love to make and eat! I can’t tell you one time I’ve scrolled my feed and not been tempted by her latest recipe. Kenya creates family friendly meals that taste amazing and always make home the place to eat. Plus her easy to follow tips and tricks help you pull them off with time to spare!

[ad] One question I get asked often when I talk about feeding my family of 5 is “do you really cook EVERYDAY?”?? •?? And the answer is “yes…. Kinda!”?? •?? And that is usually followed with, “girl, how???”?? •?? Two things that are common themes with me in the kitchen are Quick + Easy and doing things my way.?? •?? With the @hidden.valley Simply Dinners Meal Prep Kit, I am able to roll with both of those. It was quick and easy, with only 3 easy steps (swipe to see each one). And because we don’t eat pork, I used the Parmesan & Three Cheese Kit to Make Oven Breaded Chicken Tenders.?? •?? I headed to @walmart and grabbed a kit after I dropped the littlest kid off at school. And dinner was ready when everyone got home. Those evenings are the BEST!! Not to mention the interlocking mess proof trays made for easy clean up which means more time spent with my family.?? •?? In the name of keeping things simple, easy and tasty too, I made my Honey Garlic Dipping Sauce, and you can find the recipe by clicking the link in my bio.?? •?? It’s summer, and no one wants to spend all day in the kitchen. And with simple meals like this one, you don’t have to!?? • • #eatlikekenya #foodielife #tastemade #heresmyfood #ourfoodstories #tablesituation #foodblogger #foodblogfeed

Cheers Years | Durham

Cheers Years is one of my Google Search finds and I’m so happy this one popped up. Mallory has a knack for making cocktails but she has made Cheers Years a place to feed all her foodie loves with a healthy twist. Mallory has made it her mission to “healthify’ some of our favorite Southern dishes without losing the tastes we’ve come to love.

I got a bit lost in Mallory’s posts and ended up drooling over one that called to all my Southern tastes. The Twice-Baked Sweet Potato Babe Brunch is sure to be as much of a mouthful as its name! I can’t wait to grab everything I need to bring this dish straight to my table and I don’t think I’ll be sharing!

Off The Eaten Path | Charlotte

I love when a Blogger has a bit of fun with words! Off The Eaten Path Blogger Chrissie went from snapping picture of her food to sharing her own amazing recipes and food adventures as a Blogger. Chrissie describes herself as a “Public Defender By Day and a Blogger By Night”.

The power of simple sweet potatoes! These nutrient-packed puppies are always in my pantry or on the grocery list. They make an amazing meal, side dish, or dessert! Extra tip – leave the skin on! It’s packed with extra potassium and fiber. ? My favorite way to cook them these days is to throw them in the crock pot on low for 5-7 hours and they’re perfectly tender. What’s your favorite way to enjoy sweet potatoes? ?

Once I found Chrissie I had a blast clicking through some of her recent recipes. As I looked, I noticed Chrissie is not only a Foodie but seems to have a skill at coming up with some pretty great drinks too! My pick from Chrissie’s recent posts is one I can’t wait to try to mix up myself: The Blackberry Basil Gin Fizz. This drink is sure to make a great summer impression with its light refreshing ingredients and berry flavors
